LIMITED ENROLLMENT
Three dishes:
Salad with tofu or tempeh and rice
Easy-peasy seitan
Pan-fried tofu with side of mashed potatoes and roasted green beans

Bios:
In 2000, Miriam Jones co-founded VINE Sanctuary (then known as the Eastern Shore Sanctuary and Education Center) with Pattrice Jones. After 10 years on the lower Shore of Maryland, Miriam and Aram Polster relocated the sanctuary to Springfield, VT, and oversaw its expansion to include well over 400 animals (mostly formerly farmed animals) and 100 acres. At present, they both live and work on sanctuary grounds.
Aram Polster has worked with animals in a wide variety of capacities for over 40 years. He was instrumental in coordinating the move to Vermont. He was the host of "Cooking with Real Vegans," an online cooking show sponsored by VINE Sanctuary. At present, he is owner and master roaster at Precision Valley Coffee Roasters.
